while in parts of eastern China it was avoided since cattle were needed for labor. Traditionally, the cattle grazing on the grasslands ate grass instead of feedlot fodder so they did not compete with human food crops for land and instead turned inedible grass into meat and milk. Modern industrial cattle fodder needs some ingredients such as grains and oil cakes which often must be shipped (shipping costs energy/resources) long distances and could more efficiently feed humans directly. Every step up the food chain recovers only about 10% of the energy in the food, so veggie diets are technically more efficient, but humans obviously can't digest grass so the traditional nomad's diet was the only efficient and reasonable one for the harsh environment. Even Tibetan clergy are not vegetarians.
